Prerequisite Programs (GMPs, SOP, SSOPs, GRPs)




Prerequisite Programs are the foundational food safety programs required as support for any HACCP based food safety system.  Prerequisites can be:

  • GMPs: Good Manufacturing Practices (policies)
  • GRPs: Good Retail Practices (such as those found in the US FDA model Food Code)
  • SOPs: Standard Operating Procedures
  • SSOPs: Sanitation Standard Operating Procedures
  • MRs: Manufacturers Requirements
  • FRMs: Forms for record keeping
