Prerequisite Programs (GMPs, SOP, SSOPs, GRPs)
Prerequisite Programs are the foundational food safety programs required as support for any HACCP based food safety system. Prerequisites can be:
- Prerequisite programs (PREs and PPs)
- termed “operational” meaning determined in a hazard analysis
- GMPs: Good Manufacturing Practices (policies)
- GRPs: Good Retail Practices (such as those found in the US FDA model Food Code)
- SOPs: Standard Operating Procedures
- SSOPs: Sanitation Standard Operating Procedures
- MRs: Manufacturers Requirements
- FRMs: Forms for record keeping
- WIs: Work instructions
